It’s called The Bourdain firstly because he famously introduced the world to this sandwich on an episode of his show. It’s also aptly named because it’s unapologetic, simple, and just a little trashy—in the best way.
Look, if you’re not hungover while reading this, you most likely will be sooner rather than later. I encourage this behaviour. I’m also encouraging you to keep this recipe in your pocket because eventually, you will need it.
This sandwich saves lives. Let’s get to saving yours!

100g mortadella, thinly sliced
2 slices of provolone
2 slices of Pullman loaf, or a Martin’s Roll
2 tsp butter
Step 1: Make the Sandwich
Preheat each pan over medium heat.
Create 2 piles of 50g of mortadella, about 5 slices per pile.
Place both piles in the smaller pan. No oil is needed! The mortadella has plenty of fat. After about 2 minutes flip the mortadella (when crispy) and repeat on the other side. Immediately add a slice of provolone to each pile and let melt.
In the larger pan, place 1 tsp of butter and the two slices of Pullman loaf. Slide them around to ensure they are coated in the butter. Sauté until golden brown, then flip, add another pad of butter, and repeat on the other side.
Remove the bread from the pan and dress one slice with a tsp of dijon and the other slice with a tsp of mayonnaise.
Using a spatula, stack the two piles of mortadella and place them on one slice of bread. Place the remaining slice on top of the pile, and cut in half with a bread knife.
Step 2: Enjoy!
That’s all you need to do. You’re hungover. Go eat your sandwich and then lay down. Or maybe go for a walk.
